WWOOF-ers (Willing Workers On Organic Farms) have been around for a while, and presumably participant numbers will increase as people in Western countries look for travel experiences that are more meaningful and personal, and urban residents curious about agriculture seek out genuine hands-on experiences. There’s a good summary on WWOOF-ing on the Off-Grid website, with handy reminders regarding obvious but too-often overlooked details such as mentioning exactly what you are and aren’t prepared to do, spelling out any skills you’d especially like to learn, ensuring working hours are clearly spelt out, and having a can-do attitude.
